Lyophilization of Nesquik Strawberry Milk
Purpose: This lab demonstrated the use of the freeze drying technique to remove water from a sample of Nesquik Strawberry Milk
Observations: Freeze dried strawberry milk is quite crumbly. This is due to the reduced water content of the sample.
Results:
-Mass of 240 mL sample of Nesquik Strawberry Milk=259.9 grams (8.0 gram bag plus sample)
-Freeze dried sample and bag=56.0 grams
-Without the bag, the wet sample weighed 251.9 grams and freeze dried weighed 48.0 grams
(48 grams/251.9 grams) x 100= 19.06% dry product
100-19.06= 80.94% reduction in weight due to water loss
